The Cantina di Negrar wines are rooted in the wine-making tradition of Valpolicella and the Veronese wine-growing areas.
The name Si.Mento is the last part of the word ‘appassi-mento‘, but at the same time it means ‘si, mento‘ in Italian; ‘yes, I’m lying‘. It’s meant as an unloving salute from a tradition-style orthodox producer in Valpolicella to the southern Italian versions of Appassimento, which are often made with must concentrate instead of dried grapes.VARIETALS Corvina and Corvinone

NOSE It exhibits aromas of dark fruit and pickled cherries in a drinkable interpretation without sharp edges.
PALATE Si.Mento is a silky smooth wine with good body and a little charming sweetness from the dried grapes.
AGEING A proportion of the grapes (15%) have dried for 60 days before vinification, followed by a short maceration and final ageing in large, neutral oak barrels.
PAIRING Burgers, grilled food, particulrly beef and pork, pastas in rich sauces and pizza.
